The Caley is the pinnacle of a long winemaking journey of excellence, that rightfully honors Yalumba's most adventurous son, Fred Caley Smith. A blend of Coonawarra Cabernet Sauvignon and Barossa Shiraz, The Caley is a classic marriage of two noble varieties and two great Australian wine regions.
Showcasing expressive, fragrant aromatics of blackcurrant and dark cherry with cool iodine notes merging into savory, leafy hints, all typical Coonawarra Cabernet Sauvignon. A defined, composed and very inviting wine with succulent Shiraz throughout. Medium to full depth with a densely layered structure delivering a prominent yet silky tannin profile.

This has a very impressive sense of composure, offering a very attractive, cedary and floral nose with deep violets and a wealth of forest wood, bracken and blueberries, as well as plums. The palate has intensely ripe, assertive fruit flavors with a succulent, dense and rich delivery of black-cherry, cassis and blackberry flavors. Density with focus and a strong drive at the finish. An elegant, markedly fresh fifth release, with restrained twig, tobacco, bay leaf and mint nuances. Gliding along a fine-grained rail of tannins, well-focused blackcurrant leads the charge. Silky black cherry and sweet, succulent plum add dimension and juicy impetus through the mid palate. Black olive, chocolate, clove, anise, ironstone and liquorice lend savoury nuances. The 2016 The Caley Cabernet & Shiraz is sourced from both Coonawarra and the Barossa (Cabernet from Coonawarra, Shiraz from Barossa), and is an elegant if old-school rendition of the classic Australian blend. Cassis, milk chocolate, licorice, raspberry, black olive brine, bramble and spice combine to bring about a harmonious, tranquil wine. The tannins are fully entrenched into the fruit, cushioned and disguised from view from all angles. This is a satisfying, plush wine with layers of fruit and velvety tannin. Rating: 96+

Inky ruby. Highly expressive, spice-accented black and blue fruit preserves, incense, vanilla and pipe tobacco qualities on the nose, with cedary oak and spice note emerging with aeration. Offers palate-staining cherry liqueur, blackcurrant and fruitcake flavors that are braced and sharpened by a spine of smoky minerality. Gains weight with air while retaining vivacity and finishes gently sweet and extremely long, with slow-mounting, polished tannins adding framework and final grip.

A blend of Cabernet from Coonawarra, and Shiraz from Barossa, this is a cool- edged bottling of Caley that needs plenty of time in decanter to reveal its charms. It then rewards with layers of heady aromas reminiscent of dark choco- late, mint, violets, fleshy red currant, cherry, wild strawberry and vanilla bean. The palate is powerful but poised and harmonious, the silky fruit cradled by powerful, chalk-and-spice tannins that indicate a long life is still ahead. A black tie, expensive watch kind of a wine from one of Australia’s most historic producers.

Arguably the single most famous wine region in Australia, the Barossa includes both Barossa Valley and Eden Valley, making it one of the only areas in Australia to have neighboring warm and cool climate growing conditions. Yalumba is privileged to have access to some of the oldest vineyards in the world in Barossa Valley, including 1889 bush vine Grenache and 1908 Shiraz. Yalumba continually strives to reduce their impact on the environment, stay involved in the community, and make great wine with minimal intervention in the vineyard and in the winery. They are committed to sustainable practices, with the belief that the healthier and more biodiverse the vineyards are, the better the wines will be. Yalumba has been developing its own sustainable viticulture program since the mid-1990s, promoting the economic production of quality grapes. For every acre of vineyard Yalumba own, they have at least one acre of native vegetation. All Yalumba wines are crafted with wild yeast, are 100% vegan, and are made with the least intervention possible but with as much knowledge, confidence, and expertise as possible.
With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended red wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World, experimentation is permitted and encouraged resulting in a wide variety of red wine styles. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a red wine blend variety that creates a fruity and full-bodied wine would do well combined with one that is naturally high in acidity and tannins. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
How to Serve Red Wine
A common piece of advice is to serve red wine at “room temperature,” but this suggestion is imprecise. After all, room temperature in January is likely to be quite different than in August, even considering the possible effect of central heating and air conditioning systems. The proper temperature to aim for is 55° F to 60° F for lighter-bodied reds and 60° F to 65° F for fuller-bodied wines.
How Long Does Red Wine Last?
Once opened and re-corked, a bottle stored in a cool, dark environment (like your fridge) will stay fresh and nicely drinkable for a day or two. There are products available that can extend that period by a couple of days. As for unopened bottles, optimal storage means keeping them on their sides in a moderately humid environment at about 57° F. Red wines stored in this manner will stay good – and possibly improve – for anywhere from one year to multiple decades. Assessing how long to hold on to a bottle is a complicated science. If you are planning long-term storage of your reds, seek the advice of a wine professional.
