Winemaker Notes

Segura Viudas hand crafts distinctive, artisan méthode champenoise sparkling wines according to Cava traditions begun over 100 years ago. Steeped in rich Spanish heritage and situated on an estate that dates to the 11th century, Segura Viudas draws on this legacy, blending it with modern winemaking to create sophisticated yet approachable Cavas. The Segura Viudas wines come from the renowned Penedès region of Spain just outside of Barcelona. Reserva Heredad is the estate’s crown jewel—our tête de cuvée—a Cava blended from just Macabeo and Parellada that enjoys aging on the lees for 30 months or longer and riddling by hand.

The opening aromas are from aging on the lees, lightly smokey, with touches of biscuit or bread, which are followed by hints of honey, fruit and flower petals. The palate is excellent, fruity and full of flavor, with dried fruits delivering a delightful sense of abundance.

This Cava defines elegant refreshment, even in it’s presentation. It is a perfect companion for creamy pastas, such as alfredo. It marries perfectly with meat dishes, such as pork and chicken.

Segura Viudas was established in 1954 in the heart of Spain's Penedes region, one of the world's best sites for growing and producing grapes for production of sparkling wine. Segura Viudas has become one of the top Spanish sparkling wine producers and is noted for its high production standards of traditional Methode Champenoise.

A superior source of white grapes for the production of Spain’s prized sparkling wine, Cava, the Penedes region is part of Catalunya and sits just south of Barcelona. Medio Penedès is the most productive source of the Cava grapes, Macabeo, Xarel-lo, and Parellada. Penedes also grows Garnacha and Tempranillo (here called Ull de Llebre in Catalan) for high quality reds and rosès.

Equal parts festive and food-friendly, sparkling wine is beloved for its lively bubbles and appealing aesthetics. Though it is often thought of as something to be reserved for celebrations, sparkling wine can be enjoyed on any occasion—and might just make the regular ones feel a bit more special. Sparkling wine is made throughout the world, but can only be called “Champagne” if it comes from the Champagne region of France. Other regions have their own specialties, like Prosecco in Italy and Cava in Spain. Sweet or dry, white or rosé (or even red!), lightly fizzy or fully sparkling, there is a style of bubbly wine to suit every palate.

The bubbles in sparkling wine are formed when the base wine undergoes a secondary fermentation, trapping carbon dioxide inside the bottle or fermentation vessel. Champagne, Cava and many other sparkling wines (particularly in the New World) are made using the “traditional method,” in which the second fermentation takes place inside the bottle. With this method, dead yeast cells remain in contact with the wine during bottle aging, giving it a creamy mouthful and toasty flavors. For Prosecco, the carbonation process occurs in a stainless steel tank to preserve the fresh fruity and floral aromas preferred for this style of wine.
