Pazo San Mauro is situated on the southern banks of the river Mino. The property slants upward in wide terraces covering approximately 300,000 square meters, creating a natural amphitheather. On the top ride reside 16th century buildings of the Paxo and chapel constructed in 1582. For hundreds of years pilgrims had come here to presents their wood or wax votive offerings on the day of San Mauro. On the opposite side of the river, rising high above the green vineyard landscape is the medieval Portuguese tower of "Lapel". The sloping hillsides and roky terrain provide protection from the wind and provides and optimum growing environment for the vines. In this location, the varietals Albarino, Treixadura, Torrontes and Loueiro flourish is the strong sunlight. The old winery of Pazo San Mauro is partially buried and faces the south side of the large courtyard of the Pazo. The winery is equipped with a pneumatic press, stainless steel barrels for controlled fermentation and cooling system to provide the needed elements for successful fermentation.
