Wilde Farm's 2018 Dolcetto Fox Hill Vineyard is soft, fruity and supple, all of which will make it an easy wine to drink and enjoy upon release. Ripe dark cherry, plum, lavender and spice all meld in an effortless, delicious Dolcetto to drink now and over the next few years. The 100% whole clusters add aromatic nuance and brightness to the red-toned fruit in a super-expressive Dolcetto that has the potential to be an overachiever.

Wilde Farm was a place long before it was a wine. Built in 1907 on the estate of Samuel Wilde, a successful coffee and spice trader, Wilde Farm began as a horse farm, with a generous kitchen garden of vegetables and herbs. It is of the Colonial Revival style popular at the time. The edifice itself is purposefully constructed, with hand-hewn floorboards, chestnut moldings, high, plastered ceilings and strong, honest lines. Much like its eponymous wine, the house was expertly crafted of honest materials and made to age gracefully. About twenty years ago, my wife and I took over custody of Wilde Farm. There we have raised three beautiful boys, in the only home they have ever known. Wilde Farm makes wines from old vines and exceptional vineyards. Quantities are very small. Our wines are bright, balanced and made by hand. They emphasize a balance of acid and fruit. As an added bonus they age great. Pax Mahle makes Wilde Farm wines. He has a light touch and a craftsman’s approach. Together, we work hard to ensure that Pax has the best materials available and that as a team we screw it up as little as possible. We source grapes from old vine, low yield sites, where soil, climate and honest farming practices allow for a full expression of the type of grape and the place the grapes come from. We only offer vineyard designated wines (so far).We pick when the grapes are ripe and ready. Yeasts are ambient, oak is neutral and fermentation happens at its own pace. We sometimes include stems in the primary fermentation, when it makes sense. We bottle our wines unfined and unfiltered. We sell them when we think they are delicious.

This scenic region, with rolling hills covered in redwood forests as well as vineyards, is one of the world’s top producers of certified organically-grown grapes. An easy-drinker with modest acidity, soft fruity flavors—but catchy tannins, Dolcetto is often enjoyed in its native Piedmont while more serious Barolos and Barbarescos take their time to age. Here, this is the wine you are most likely to find at the table on a casual Tuesday night, accompanying local charcuterie or "apertivo" hour (the canonical Piemontese way to tease your palate before dinner). In recent years Dolcetto has found some footing in California, but plantings are fairly limited outside of Italy.

In the Glass

Dolcetto translates to “little sweet one,” and though the wines produced are typically not sweet in terms of residual sugar, they do possess delightfully fruity flavors of red cherry and blueberry, with an almond-like bitterness at the end and occasional hints of chocolate and baking spice.

Perfect Pairings

Dolcetto is a lively, exuberant variety without a ton of complexity in most cases, and as such is best paired with simple, flavorsome foods such as pasta, pizza and simple meats—anything an Italian farmer might consume after a long day in the field.

Sommelier Secret

In most of Piedmont, easy-ripening Dolcetto is relegated to the secondary sites—the best of which are reserved for the king variety: Nebbiolo. However, in the Dogliani zone it is the star of the show, and here it makes a bigger, riper and a more serious style of Dolcetto, many of which can improve with cellar time.
