Winemaker Notes

Deep red in color with a mauve hue. Savory and layered with notes of menthol, jarrah forest floor and nori, entwined in deep blackcurrant and plum fruit. Oak derived cigar box, cedar and dark chocolate nuances float through the background. Seamless and vibrant on entry with fine, powdery tannins, plum and red berry fruit and crisp acidity. The palate then tapers to a wonderful fine, dry finish accented with dried herbs and dark chocolate oak.

Firm and chewy, with juicy raspberry and cherry flavors at the core. Reveals a lively balance and hints of white pepper and cream on the focused, harmonious finish. Best from 2016 through 2020.

Composed of 93.87% Cabernet Sauvignon with 5.18% Malbec and dashes each of Petit Verdot and Cabernet Franc, the 2011 Cabernet Sauvignon was aged 16 months in French oak, 43% new. Deep garnet-purple colored, it offers a very good intensity of pencil lead, cloves and dried Mediterranean herbs notes over a core of cassis and wild blueberries. Medium-bodied, it has a solid backbone of medium to firm chewy tannins and crisp acid supporting the taut, muscular fruit and finishing long. Delicious now, it should cellar to 2018+.

Relatively warm and dry, the region is cooled by breezes from the Indian Ocean. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
