Winemaker Notes

The color is of light straw with enticing aromas of fresh cut seagrass, lychee, and orange blossom. With a balance of citrus and grassy notes, this blend of Sauvignon Blanc highlights the Musque clone, which is known for its distinct aromatics and expressive flavor. Leading with notes of Meyer lemon and grapefruit with hints of flint on the finish, this Sauvignon Blanc is framed by crisp acidity while maintaining a delightfully round mid-palate. We recommend that this wine be served lightly-chilled to allow the flavors and aromas to exhibit their vibrancy

    COMMENTARY: When I search for Sauvignon Blanc, I have seldom gone to the Central Coast. I was pleasantly surprised with the excellence of the 2016 Tolosa. TASTING NOTES: This wine shows excellent intensity and brightness. Its aromas and flavors of tart melon, a hint of minerality, and a slightly candied note should pair it well with grilled oysters in a ponzu sauce. (Tasted: August 17, 2018, San Francisco, CA)

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.

California’s coolest wine growing area, Edna Valley excels in the production of high quality Central Coast wines like Pinot noir, Chardonnay, Rhône Blends and aromatic white wines. It has a cool Mediterranean climate and an incredibly long growing season, giving late-ripening varieties plenty of opportunity to develop great phenolic complexity.

Its northwest to southeast orientation creates a direct path for cool Pacific air and fog to penetrate the valley from the Los Osos and Morro Bay area inwards. Low hillsides of both calcareous and volcanic soils are home to much of the vineyard acreage of the Edna Valley.
