Winemaker Notes

The powerful, structured foundation of the wine; Paso Robles’ hot climate provides Cabernet fruit with ideal tannins, phenolics, and flavor. Warm days and cool nights in San Lucas add bright red fruit and herbal notes. Higher than average temperature and lots of sun in Lodi contribute to jammy, flavor-packed fruit with ripe tannin.

Slow Press Cabernet undergoes malolactic fermentation and is then aged in American oak barrels for 9 months. This process delivers bold, concentrated flavors of dark fruits, blackberries and cassis, with notes of tobacco and leather. Its robust structure and firm tannins grip the taste buds, leaving a velvety finish.

    Generous and flavorful, this is one of the best California AVA wines available. It's concentrated and tannic, with medium-full body, a hint of sweetness and layers of dark cherry and plum fruit. Baking spice nuances linger on the finish. Best after 2019.

Covering the most vine acreage in the state compared to any other red wine variety, Cabernet Sauvignon produces as much wine in California as Merlot and Pinot Noir combined. The state’s diverse terrain and microclimates, as well as the freedom of its winemakers, allow for an incredible range of wine styles from this single grape.

California’s most famous region—and especially for Cabernet Sauvignon—is the acclaimed Napa Valley. While Cabernet is successful throughout the world, rarely has it achieved such merit as it does from the Napa Valley. Lake County in California’s North Coast has become a focus for some of Napa’s more respected growers. From the Central Coast come iconic examples of classic California Cabernet; Lodi and the Sierra Foothills are great budget-friendly sources of amicable Cabernets.
