Winemaker Notes

Purple hue in the glass with aromatics of cassis, wild berry, black olive, smoked pepper and cocoa powder. The palate is a unique blend of the earth and spice characters of the Carignane with the structural aspects of the Cabernet Sauvignon. These components are lifted and filled out by the fleshy fruit of the Grenache and Syrah. The finish showcases fine-grained tannins deftly woven into the textured fruit profile.

An ode to Priorat from winemaker John Lancaster, the 2012 Las Aves is a stunning blend of Grenache, Syrah and Cabernet Sauvignon that's brought up all in barrel. Medium to full-bodied, layered, textured and still elegant, it has ample red and black fruits, crushed rock, peppery herbs and subtle leather-like aromas and flavors. It has tons of character and should drink nicely for 5-7 years.

Skylark Wine Company is a collaboration between Boulevard Restaurant Wine Directors John Lancaster and Robert Perkins. John and Robert have run the wine program at the acclaimed Boulevard Restaurant in San Francisco for the past twelve years. During their tenure at Boulevard, they have built a close friendship, an inventory of wines from around the globe and a palate of tasting wines of the world from vintage to vintage.

This partnership has created long-term relationships with the entire scope of the wine industry, with winemakers, vineyard managers and owners. With these relationships, their next logical progression was the realization of a dream: making fine wine from select vineyards. While the original plan was simply a barrel, they quickly jumped in with 14 barrels of Syrah from the 2002 Harvest. Skylark Wine Company was formed.

"We strive to produce wines that crystallize our passion within each bottle. Because of our relationships with meticulous and respected grape growers, we have been able to produce wines of distinction and character that represent the best of what Northern California vineyards have to offer. With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World experimentation is permitted and encouraged. Blending can be utilized to create complex wines with many different layers of flavors and aromas, or to create more balanced wines. For example, a variety that is soft and full-bodied may be combined with one that is lighter with naturally high acidity. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
