Redemption Rye’s goal is to bring back the classic American Rye cocktail. While the Federal law states that a whiskey must be 51% rye grain to be classified as a rye we chose to push grain content to 95%. This not only pushes the flavor forward it also magnifies the unique profile of the rye grains.
Big and spicy aromas with toasted oak, vegetal notes, all spice and anise. On the palate, beautiful Rye spice with light floral and citrus notes along with dark spices and black pepper. A slight mint finish makes this great for sipping or mixing in a classic cocktail.
Mash Bill: 95% Rye, 5% Barley
Known for its peppery, spicy bite, Rye serves as the ideal base for cocktails like the Sazerac, Manhattan or Old Fashioned. In order for a spirit to be labeled an American Rye Whiskey, the mash bill must be comprised of at least 51% rye grain. The remainder of the mash is most often a combination of malted barley, wheat or corn. After distillation is complete, the spirit is transferred to unused, charred white oak barrels for a minimum of two years, though many producers choose to age longer.
