Aromatic: An abundance of earthy aromas, leather, tobacco with layers of charred wood, dark chocolate, and treacle toffee. Spice: Full bodied spice front followed by vanilla, honey, and dried apricot. Oaky: Lingering honey sweetness on toasted oak.

Brooding, primal, and robust thanks to its fat, rolling, oily notes, slightly fermenting Bramley apples, oolong tea, green banana, hint of sherry, and purposeful delivery of allspice, peppercorns, and star anise. The fruit and chocolate stay one step ahead of the spices; orange, chocolate, coffee, apricot, boiled candy, marmalade on buttered toast, and barley sugar meet a finish of heavier spices, bitter chocolate, and dusty cocoa. Unmistakable, epic whiskey.
The result of an historically prohibitive tax placed on malted barley by the English crown, Irish Whiskey is most often produced from a combination of un-malted barley and other grains. Whereas most other Whiskeys are twice distilled, Irish Whiskeys are distilled three times in a column still and must mature in oak barrels for a minimum of three years. These intricate production steps combine to make them lighter, smoother and more approachable than other styles.
