If you want to understand why people are so besotted with Pierre-Yves Colin-Morey's white wines, buy yourself a bottle of his entry point St-Aubin, which comes from a single parcel aged between 20 and 50 years. Matured in 25% new wood, it's as crisp as a freshly laundered white shirt, with cool precision and a lick of limestone zip.

COMMENTARY: Saint-Aubin is one of my favorite Burgundy appellations, and the 2017 Pierre-Yves Colin-Morey Le Blanc is a superb wine. TASTING NOTES: This wine is generous without being heavy. Its aromas and flavors of delicious ripe fruit and mineral accents are bright and persistent. Pair it with seared sea scallops in a bed of wild, organic greens. The 2017 Saint-Aubin Le Banc offers up aromas of green orchard fruit, citrus oil and almond paste, followed by a medium to full-bodied, elegantly glossy palate with good depth at the core, tangy acids and a chalky finish. It's a great introduction to Pierre-Yves Colin's style.

Pierre Yves Colin was the winemaker for his father's Domaine Marc Colin until 2005. He began his own domaine, first as a micro-négociant operation, focusing on tiny quantities of the finest wines that he can buy. Now he has grown his domaine with the help of family holdings to 70% plots that he owns and 30% grapes he purchases. His holdings are mostly in Chassagne-Montrachet (where the domaine is located) but he also produces multiple bottlings of Meursault, St. Aubin, and Puligny-Montrachet. Pierre-Yves has rapidly become a star in Cote de Beaune and is now considered one of the pre-eminent young producers of White Burgundy. His choice to use larger demi-muid barrels and eschew the use of battonnage, makes each one of his bottlings a clear expression of its terroir and a study in mineral-driven Chardonnay. Tasting in the Colin-Morey cellar (or anywhere you are lucky enough to have a bottle), is truly a special experience. With each vintage Pierre-Yves continues to prove his enormous talent and we look forward to drinking his years for many years to come!

A steep, upcountry basin (referred to as a combe in French) in the southern end of the Côte de Beaune, St. Aubin is a direct westerly neighbor to Chassagne-Montrachet and Puligny-Montrachet. Recent years have seen a boom in white wine production so that now Chardonnay accounts for more than three quarters of area under vine here. Two thirds of St. Aubin is classified Premier Cru (30 total vineyards); most notable include Les Charmois, La Chatenière, En Remilly and Les Murgers Dents de Chie. The Premiers Crus of St. Aubin, wrapping like a ribbon upon the southeast and southwest facing slopes, produce fresh and elegant whites. When young, these tout a refreshing grip and convey qualities of white flowers, citrus, pear, green almond and wet stone. Given some age, a graceful evolution occurs so that older St. Aubin whites express richer aromas of beeswax, honey, marzipan and spice.

California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
