Winemaker Notes

The 2016 Philip Togni Cabernet is a classic wine with great aging potential. The growing season was ideal with harvest taking place the 8-21 September. Unfortunately we were still at the end of a four-year drought so the amount of wine we were able to produce was less than a normal year.

    Deep garnet-purple colored, the 2016 Cabernet Sauvignon Tanbark Hill Vineyard is wonderfully expressive, offering notions of Black Forest cake, warm cassis and blackberry preserves with hints of licorice, red roses and cedar chest plus a touch of menthol. The medium-bodied palate is laden with perfumed black berry flavors, framed by plush tannins and uplifting freshness, finishing on a lingering minty note.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
