Winemaker Notes
The 1997 Cabernet Sauvignon reflects the quality of the 1997 red wine vintage. It is intense deep red/black in colour and on the nose shows full blackcurrant/blackberry aromas with subtle smoky oak characters.
Rich in flavour, the palate has hints of ripe plum and blackcurrant which integrate well with the spicy characters from the French and American oak - oak which does not over power, but gives stylish complexity and lift to the fruit. A wine showing superb structure, it finished firm with supple soft tannins.
A wine which can be enjoyed now with red meat dishes, or a good cheese, it has excellent cellaring potential and will reward anyone with the self control to tuck it away in a cool place for six plus years.
