Winemaker Notes
The relatively high elevation of the slope allows for full ripening of the grapes without loss of acidity or aroma. The goal was a wine with a complex aroma of tropical fruit (without notes of unripeness) and with the acidity and structure that allows for several years of evolution in the bottle.

The 2018 Sauvignon Voglar is smoky and savory in the glass, with air-dried meats and rosemary evolving into incense, young peach and dusty florals. This balances warm vintage character and soft textures with sour citrus and stimulating tension. It's the acid-to-tart-fruit balance here that impresses most, as it tapers off long, lightly structured and sapid, like biting into a candied lemon rind. The 2018 vintage was warm, yet the Dipoli style has paired perfectly with its character.
Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
