    Winemaker Notes

    The AAA on the label pays homage to David’s days in the wool trade and was stamped on the best grades of wool by the Guesser. It is a vibrant blend of from some special little pockets amongst their vineyards. The Shiraz was selected from the ‘Gateway’ and ‘Jones Block’ vineyards, renowned for producing some of the best fruit in the region. These select parcels were blended with complimentary Grenache to create a wine that is engaging to a wide range of drinkers. This blend is fun, appealing and, unlike some members of Paxton, not over the top.

The Paxton wine range is an approachable collection of wines that showcase McLaren Vale’s fruit quality (through Paxton’s superior vineyard sites), natural diversity and varietal expression. In the winery, minimal winemaking intervention ensures the integrity of the fruit from vineyard to bottle. Paxton vineyards are spread across a diverse number of sites and soil types, which are managed without compromise from planting to harvest. David Paxton continues to strive to minimize inputs and manages the Paxton vineyards biodynamically.

    Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

    Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.

    With bold fruit flavors and accents of sweet spice, Grenache, Syrah and Mourvèdre form the base of the classic Rhône Red Blend, while Carignan, Cinsault and Counoise often come in to play. Though they originated from France’s southern Rhône Valley, with some creative interpretation, Rhône blends have also become popular in other countries. Somm Secret—Putting their own local spin on the Rhône Red Blend, those from Priorat often include Merlot and Cabernet Sauvignon. In California, it is not uncommon to see Petite Sirah make an appearance.
