Winemaker Notes

Rich, savory and meaty, this rustic red is loaded with spicy black fruit and spices. Deep black flavors and spices make for a rustic and soulful red wine that needs a little more time than the luscious 2015 to open up… but when it does look out for the vibrant red fruit and lively spices that keep this one floating along.

The 2016 Carignan Testa Vineyard is an absolutely delicious wine that screams with varietal character. Sweet red cherry, rose petal and blood orange notes all run through this super-expressive, pliant Carignan. The 2016 is not especially complex, but is impossible to resist.

Pax Wine Cellars is focusing on the production of premium vineyard-designated Syrah based wines from the North Coast of California. We hope to eventually add a Grenache based wine, and a Northern Rhone inspired white wine. Quality is key and sourcing exceptional sources for these two wines is paramount. Our Mission Statement is simply stated; “To produce reference point Syrah based wines that are indicative of where they are grown”. We are not trying to replicate any other Syrah produced in the world; Hermitage can only be made from one place. Our intent is to create unique wines with strong personalities of where they are grown. We believe that the cooler climates along the northern coast of California have the potential to produce world-class Syrah, and that is our goal. We utilize traditional winemaking techniques; it is a style of winemaking that is really without a style. The uniqueness of the growing sites for each of these vineyards should give the wine its personality; it is our job to encourage that personality to shine through. We feel the best way to accomplish this is by utilizing Indigenous fermentations, minimal handling, unobtrusive use of the finest French oak and bottling without filtering or fining. This approach to winemaking is very pure and unadulterated; therefore the wines will typically vary in color, alcohol, pH and most other characteristics that determine any given winery's ‘style’. Each of our wines is the purest expression of that vineyards fruit that we are able to capture in the bottle. This is the reason that sourcing vineyards of exception or at least vineyards that have ‘something to say’ is the single most important thing that we can do to guarantee our success. We spend, as much time in our vineyards as we can. It is simply the only way. We lease our parcels by the acre or row when necessary, and we encourage organic farming practices. Low yields are a rule and each vine is cared for individually.

A large and diverse appellation within California’s North Coast AVA, Mendocino is home to several smaller sub-regions—most notably the Anderson Valley. This scenic region, with rolling hills covered in redwood forests as well as vineyards, is one of the world’s top producers of certified organically-grown grapes. Carignan

Responsible for some of the most stunning old vine red wine on the planet, Carignan has an amazing capacity to survive dry, arid climates and still produce lovely, mouthwatering wine. In Spain it goes by the name of Mazuelo and while it may have originated there in the province of Aragón (with Grenache), its popularity lies elsewhere. It spread across countries that border the Mediterranean Sea, becoming ubiquitous throughout the south of France. Today it flourishes as a blending grape in the Languedoc-Roussillon and also growns in Sardinia, mainland Italy, Cyprus, Turkey, Croatia and Northern Africa. Likewise, producers in the New World—namely California and Chile—bottle excellent single-varietal Carignan wines.

In the Glass

This is a medium-bodied wine with dried cranberry and raspberry fruit. It can take on an attractive savory quality with alluring notes of baking spice, black tea, black licorice or earth.

Perfect Pairings

Try Carignan with seared ahi, roasted turkey or duck, lamb gyros or chops, aged Gouda or Manchego and cured meats.

Sommelier Secret

Historically Carignan did not enjoy the respect that it does today. In the mid 20th century, Carignan covered nearly 140,000 ha in Algeria, where it was made into low quality bulk and blending wine to supply mass-market demand.
