Pale golden straw in color, the 2023 Paul Dolan Sauvignon Blanc has enticing aromas of tart green apple, lemongrass, and yuzu complimented by floral notes of honeysuckle and jasmine. On the palate, the green apple carries though to bright flavors of starfruit and lemon peel, balanced by fresh plantain and a hint of chamomile tea. Crisp and bright with a juicy mouthfeel, that carries through to the refreshing finish.

This zippy wine offers aromas of citrus blossom, green apple, green papaya and dried herbs on the nose. Flavors on the palate are lemon honey, pink grapefruit, pear and orange peel interwoven with saline, mineral, dried herbs and a dry finish. Pair with fried calamari and cocktail sauce.
Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
