The size, shape, and design of our Pinot Noir fermentors contribute to maximizing the extraction of aroma and flavor components from the grapes without sacrificing delicacy and finesse. The warm fermentation temperatures we strive for are easier to obtain and control in a closed top system. Prolonged skin contact is utilized since carbon dioxide naturally blankets the must in this controlled environment with the goal being to soften grape tannins and enhance the wines texture and overall sense of balance.

While the valley claims a cool, continental climate, and is heavily influenced by the cold, moist winds of the Pacific Ocean, its warm and dry summers allow for the steady, even ripening of Pinot noir.
