Winemaker Notes

Made in the traditional method entirely from Pinot Noir grapes, this wine has ripe berry flavours with a tight mousse giving lovely texture and rich creamy flavours. The palate exudes ripe berries, overtones of spice and a crisp, clean finish. With over 18 months on lees, this wine has class, complexity and consistency – and is perfect to drink now!

    This pale strawberry-hued bubbly is made entirely from Pinot Noir. It leads with delicate yet ripe red berry and peach notes, flecked by florals, strawberry leaf and yeast at the back. Dry, but not raspingly so, the ripe red and stone fruit flows through to the finish, where a stemmy flavor caps things off. A balanced, creamy-textured and refreshing sparkler.

A term typically reserved for Champagne and Sparkling Wines, non-vintage or simply “NV” on a label indicates a blend of finished wines from different vintages (years of harvest). To make non-vintage Champagne, typically the current year’s harvest (in other words, the current vintage) forms the base of the blend. Finished wines from previous years, called “vins de reserve” are blended in at approximately 10-50% of the total volume in order to achieve the flavor, complexity, body and acidity for the desired house style. A tiny proportion of Champagnes are made from a single vintage.

There are also some very large production still wines that may not claim one particular vintage. This would be at the discretion of the winemaker’s goals for character of the final wine.

Directly south of the city of Melbourne and the Mornington Peninsula wine region, the cool-climate island of Tasmania has earned an honorable reputation as the country’s finest producer of Sparkling Wine. Naturally the region also excels in top quality still wines from Pinot Noir, Chardonnay and Riesling, all distinguished because of a high natural acidity. Most of the Tasmania vineyards cluster around the eastern side of the island from north to south.
