Winemaker Notes

This Chardonnay is a classic wine which will complement cheese or creamy dishes as well as be rewarding for the patient ones. The grapes for this wine come from an Italian family’s vineyard in Sunbury. Soils are very rocky basalt. Grapes were handpicked in late February and whole bunch pressed to old ex-Bindi barrels for wild fermentation. The wine was aged for twelve months on gross lees. Unfined, unfiltered.

Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
