Winemaker Notes
A flood of intense fruits lift from the glass as guava, black currant and gooseberry mingle with custard apple, cantaloupe, sweet herbs and citrus zest. The palate offers bright and intense fruit flavors, a lovely lemon butter richness and a long refreshing citrus acidity to finish.
Sauvignon Blanc Semillon, with its bright fruit flavors, acidic structure, and medium mouthfeel, is quite versatile and can pair with a variety of foods from green salads to light pasta dishes to Mediterranean appetizers. Additionally, Sauvignon Blanc Semillon from maritime climates lends itself particularly well to a variety of shellfish - especially oysters.
Blend: 88% Sauvignon Blanc, 12% Semillon
Sometimes light and crisp, other times rich and creamy, Bordeaux White Blends typically consist of Sauvignon Blanc and Semillon. Often, a small amount of Muscadelle or Sauvignon Gris is included for added intrigue. Popularized in Bordeaux, the blend is often mimicked throughout the New World. Somm Secret—Sauternes and Barsac are usually reserved for dessert, but they can be served before, during or after a meal. Try these sweet wines as an aperitif with jamón ibérico, oysters with a spicy mignonette or during dinner alongside hearty Alsatian sausage.
