Winemaker Notes

The 2007 vintage is a remarkable 100% Cabernet Sauvignon wine that seduces you with its dark crimson color and intense dried fruit aromas of candied fruit and allspice. Medium tannins gracefully lead you on a journey with many a nuance. Twenty-five months in new French Haute Futaie oak barrels adds a dimension of toasty vanilla. After bottling, the wine continued its development in the bottle three years prior to release, making it perfect for enjoyment now. Best to consume within ten years from harvest.

Cabernet hardly gets richer or riper than this. The wine offers a huge blast of ripe and concentrated blackberries, cherries, cassis and mocha. The tannins are dense, yet soft and rich, while the acidity is just strong enough to support the structure. What a beauty. Lovely to drink now, and will develop over the next 10-plus years.

The Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without thinking of the other. Although Cabernet has many important outposts throughout the wine world, nowhere else has it achieved such success (and, at the highest end, commanded such lofty prices) than in Napa. Here, it is responsible for bold, opulent, and dark-fruited wines with grippy tannins and a healthy dose of alcohol. The best examples can age for decades. Each of Napa’s smaller sub-AVAs imparts a different character to Cabernet, such as Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
