Winemaker Notes
Exhilarating blackberry and blueberry aromas are enhanced by crushed violet, herbes de Provence, and spiced tea. On the palate, dense and soft, with finely textured tannins. Juicy layers of black and red currants lead to a bright finish, accented by pastry notes from extended barrel aging. Delicious with rosemary-seasoned ribeye and garlic roasted potatoes with parsnips and fennel.

The Cabernet Sauvignon, Petit Verdot, Malbec, and Caber- net Franc grapes in this wine were grown in gravelly, lime-laden soils at an elevation of 1,700 feet. Once drawn in by its immediate perfume of dark chocolate and blueberry preserves as well as its silky, plush, mouth-coating texture, you're treated to waves of milk chocolate covered boysenberry. Nutmeg-dusted cedar and dried violets flash across the palate, leaving behind a slightly chalky finish

The 2021 Cabernet Sauvignon Hilltop is terrific as well as a great value. Cassis, ripe blue fruits, graphite, leafy herbs, and tobacco all define the aromatics, and it's medium to full-bodied, with terrific ripeness and notable purity. A structured, tannic 2021 that will last at least a decade, it's a brilliant value in California Cabernet Sauvignon.

Vinous
The 2021 Cabernet Sauvignon Hilltop lifts from the glass with a peppery freshness, mixing hints of sage with chalk dust and blackberries. It's soothingly round and supple with ripe red and black fruits underscored by saline minerals as grippy tannins mount toward the close. This finishes structured with medium length, leaving the palate refreshed while maintaining youthful poise.

Baked black cherry, blackberry jam topped toast and light caramel aromas are well-integrated on the nose of this popular wine. Ripe black cherry flavors hold through the palate, where coffee bean and more caramel elements contribute to the familiar finish.

Today, J. Lohr farms more than 4,000 acres of estate vineyards in Monterey's Arroyo Seco and Santa Lucia Highlands appellations, Paso Robles, and St. Helena in the Napa Valley. They produce eight tiers of award-winning releases: J. Lohr Signature Cabernet Sauvignon, J. Lohr Cuvée Series, J. Lohr Vineyard Series, J. Lohr Gesture, J. Lohr Pure Paso Proprietary Red Wine, J. As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.
Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.
The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
