Winemaker Notes
The Ultra-cab returns to show us what it can do—powerhouse, year after year. Fantastically dense violet/ruby color—it oozes body and exudes strength—and that's just on first whiff! Notes of rich black currant and cassis are in the forefront with the minerally gravel and faint lead pencil notes to balance. Strong finish that was aged in neutral oak barrels (20+ months as a matter of fact), providing the toasty vanilla accents. Tingly tannins and balanced acidity provide structure and backbone.
Pair it with a seared NY strip steak and smashed new potatoes in herb-garlic butter and charred broccolini with shaved parmesan.

Dark and delicious flavors fill out the velvety tannins of this full-bodied, fruit- and spice-saturated wine for a potent, palate-coating effect. Cocoa, espresso and clove aromas lead to lush black cherries, blackberry syrup and oak-char flavors. Best from 2025–2032.
While Sonoma County is acclaimed—and rightfully so—for its Chardonnays, Pinot Noirs, and Zinfandels, it also produces exceptional Cabernet Sauvignon. Of the region’s 18 American Viticultural Areas, only a handful produce top-notch Cabernet Sauvignon. These appellations include Alexander Valley, Knights Valley, Sonoma Valley and Dry Creek Valley. Sonoma Cabernet Sauvignons made in these appellations can offer a complex array of aromas and flavors. Fruit notes such as blackberry, blackcurrant, cassis, black cherry and raspberry often are accompanied by hints of graphite, dusty earth, cigar box, toast and vanilla. The varietal has a rich history in Sonoma, and some of these Cabernet Sauvignons and Cabernet-based blends rival the best from Napa Valley.
