Winemaker Notes
Dense dark red to black color of great intensity. An intense and rich bouquet led by the ripest cassis and berry fruits, rich and opulent but brooding in its youth. Behind the primary fruits are distinctive vineyard characteristics of dark chocolate and mint. The oak is background cedar which will recede further as the fruits emerge with some bottle age. This vineyard consistently produces intense fleshy and full mid palate Cabernet with massive fruit weight with dark cherry and blackcurrant flavours. At the time of writing the wine is very youthful and tight but it still has ample fruit sweetness that will only become more accessible as the wine matures in bottle. This is a big full wine with ample flavour and concentration in the classic Margaret River tradition.

Wilyabrup cabernet, grown close to the Indian Ocean, can take on plush, silken generosity while still maintaining its freshness, which is the best aspect of this wine. Its blackberry flavors and rose scents show a little heat and some waxiness in the texture, but overall, this is a satisfying red for grilled lamb chops.

COMMENTARY: The 2017 Hay Shed Hill Cabernet Sauvignon does an excellent job of balancing oak and fruit. TASTING NOTES: This wine starts with plenty of wood in its aroma before settling into an attractive mix of black fruits, dried herbs, and oak. Pair it with grilled beef. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
Home to some of Australia’s most elegant and long-lived red and white wines, Margaret River is situated in the farthest reaches of Western Australia. Relatively warm and dry, the region is cooled by breezes from the Indian Ocean. Margaret River takes some inspiration from Bordeaux, producing top-quality Cabernet Sauvignons and Bordeaux Blends with firm structure, mouthwatering acidity, balanced alcohol and notes of herbs and spice. For white wines, refreshing blends of Sauvignon Blanc and Semillon as well as complex, age-worthy Chardonnays are regional specialties.
