Winemaker Notes

The Margaret River produces a distinctive and attractive Pinot Noir due to its mild ripening conditions in a cool climate. Planted at the Three Hills vineyard, hand-pruned and hand-picked at the perfect ripeness level to maintain bright fruit and great acidity. Partial wild-yeast fermentation in barrel, then aged in Billon, Dargaed, and Jaegel oak for ten months prior to bottling.

    This Pinot starts off subdued, offering quiet scents of fresh strawberry, vanilla, dried green herbs and a little white-pepper spice. But give it time in glass and it opens dramatically, revealing much more heady, red-fruited and spicy aromas and an amaro-like herbal character. Fruit on the palate is ripe and juicy, backed by a soft savory line of tannins and crispy acidity. That amaro bitterness creeps in on the finish. Drink slightly chilled with summery cuisine.

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”

Home to some of Australia’s most elegant and long-lived red and white wines, Margaret River is situated in the farthest reaches of Western Australia. Relatively warm and dry, the region is cooled by breezes from the Indian Ocean. Margaret River takes some inspiration from Bordeaux, producing top-quality Cabernet Sauvignons and Bordeaux Blends with firm structure, mouthwatering acidity, balanced alcohol and notes of herbs and spice. For white wines, refreshing blends of Sauvignon Blanc and Semillon as well as complex, age-worthy Chardonnays are regional specialties.
