Winemaker Notes

This wine is a lustrous crimson color. Richly defined aromas of red berry, dark cherry, and blackberry are complimented on the palate with generous flavors of juicy dark fruits. The palate is enhanced with savory characteristics of olive, cassis and brown spice. Subtle and deft oak handling has ensured the flavors are supported but not overwhelmed by oak character, only contributing to the fine structure of the wine. The regional varietal characters of the Limestone Coast Shiraz and Cabernet Sauvignon compliment each other and combine to create an outstanding medium bodied classic Australian blend.

The fruit for the 2008 Limestone Coast Shiraz Cabernet is sourced from Mt. Benson, Robe, Coonawarra and Padthaway. Blended of 64% Shiraz and 36% Cabernet Sauvignon, it gives a very deep garnet purple color and pronounced blackberry and blackcurrant notes with some chocolate, mint and Mediterranean herbs. The concentrated, full bodied palate is well structured with high acidity and a medium level of grainy tannins, finishing long and fruity. Drink it now to 2014.

Covering a long strip of southeastern coastline in South Australia, the Limestone Coast growing region has a moderately cool climate and includes the subregions of Coonawarra, Mount Benson, Mount Gambier, Padthaway, Robe and Wrattonbully.

Its warm northern and inland areas are recognized for high quality, full-bodied Shiraz and Cabernet Sauvignon. The much cooler Mount Gambier, to the extreme south, is well-suited to Pinot Noir and Chardonnay.

With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World, experimentation is permitted and encouraged. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a variety that creates a fruity and full-bodied wine would do well combined with one that is naturally high in acidity and tannins. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
