    Winemaker Notes

    Canon is Michel Guignier's most ambitious wine and definitely a Beaujolais you could slide into a Burgundy blind tasting and trick a few folks. Pinot-y in style with a bit more amplitude and sweeter fruit than his other wines, but with the characteristic structure of Morgon. Guignier's oak experimentation have served him well with this lovely wine.

    Michel Guignier is a fourth generation vigneron in Villié Morgon, in the heart of the AOC Morgon appellation in Beaujolais. Following in the footsteps of the famed “Gang of Four” in Morgon, Guignier is committed to producing wines in the most natural way possible in order to both protect the environment and create wines that are alive and transmit a sense of place. He is in the process of slowly converting his estate to full organic certification, though has been composting and sowing grasses, herbs snd wild flowers between rows for many years. The Morgon appellation is characterized by soils of decomposed granite and crumbly schist referred to regionally as "roches pourries", or rotten rock. Many of Guignier’s vines are up to 70 years old, with all being tended to by hand and yields are kept to a minimum. He is a respected farmer in the appellation and used to sell fruit to reupatable vignerons in the region, including Marcel Lapierre. Guignier feels that when grapes arrive at the cellar at full physiological ripeness you have everything you need to make a top wine. As such, grapes are picked entirely by hand and rigorous sorting is done both in the vineyard and in the cellar before the grapes go into cement vats for vinification. Guignier follows a traditional vinification “à la Beaujolaise” with no de-stemming and with only indigenous yeasts used for the fermentation. The wines are macerated for 6-7 days for the Beaujolais and up to 14-15 days for his top Morgons. Guignier uses a vertical wooden press that slowly and gently presses the grapes. After pressing, most of his wines are returned to cement to finish their alcoholic and malolactic fermentations. His top cuvée, Morgon "Roche Pilée", is from 60+ year old south-facing vines at the base of the Cote du Puy, and is raised in neutral burgundy barrels. The élévage is between 5 and 15 months depending on the terroir and the quality of the vintage. Vintages with more tender, forward fruit are bottled a bit earlier, while the more structured years receive a longer time in vat or wood before bottling. Guinier uses minimal doses of S02, though he prefers to add it after the malolactic rather that at bottling as he feels it integrates better into the wine. His newest Morgon cuvée known as "Canon" sees no sulfur in vinification and is also aged in neutral barrels. Guignier’s wines display a transparent, ethereal, soil-driven quality that makes naturally-made, top Beaujolais so compelling and fun to drink. Among them are a fresh and charming Beaujolais AOC made from 50 year old vines, a rich and well structured Morgon Vieilles Vignes from 60-70 year old vines, and the aforementioned Morgon La Roche Pilée and Morgon Canon. Michel Guignier is clearly a confident and ambitious vigneron who will soon join the ranks of the many luminaries in the village of Morgon.

    The bucolic region often identified as the southern part of Burgundy, Beaujolais actually doesn’t have a whole lot in common with the rest of the region in terms of climate, soil types and grape varieties. Beaujolais achieves its own identity with variations on style of one grape, Gamay.

    Gamay was actually grown throughout all of Burgundy until 1395 when the Duke of Burgundy banished it south, making room for Pinot Noir to inhabit all of the “superior” hillsides of Burgundy proper. This was good news for Gamay as it produces a much better wine in the granitic soils of Beaujolais, compared with the limestone escarpments of the Côte d’Or.

    Four styles of Beaujolais wines exist though most is sold under the basic Beaujolais appellation. The simplest, and one that has regrettably given the region a subpar reputation, is Beaujolais Nouveau. This is the Beaujolais wine that is made using carbonic maceration (a quick fermentation that results in sweet aromas) and is released on the third Thursday of November in the same year as harvest. It's meant to drink young and is flirty, fruity and fun. The rest of Beaujolais is where the serious wines are found. Beaujolais-Villages, which must come from the hilly northern part of the region, offer reasonable values with some gems among them. The superior section are the cru vineyards coming from ten distinct communes: St-Amour, Juliénas, Chénas, Moulin-à-Vent, Fleurie, Chiroubles, Morgon, Regnié, Brouilly, and Côte de Brouilly. Any cru Beajolais will have its commune name prominent on the label.

    Delightfully playful, but also capable of impressive gravitas, Gamay is responsible for juicy, berry-packed wines. From Beaujolais, Gamay generally has three classes: Beaujolais Nouveau, a decidedly young, fruit-driven wine, Beaujolais Villages and Cru Beaujolais. The Villages and Crus are highly ranked grape growing communes whose wines are capable of improving with age whereas Nouveau, released two months after harvest, is intended for immediate consumption. Somm Secret—The ten different Crus have their own distinct personalities—Fleurie is delicate and floral, Côte de Brouilly is concentrated and elegant and Morgon is structured and age-worthy.
