Clear, limpid color. The nose is fresh with fruity aromas (lemon). Mineral and saline on the palate, revealing excellent balance and freshness. Round on the palate, with a toasty, butter notes on the finish.
Best served alongside roasted poultry, fish or seafood in sauce, mushrooms in a creamy sauce and cheese or goat cheese tarts.

This substantial, succulent, biodynamic Chardonnay captures Limoux's characteristic freshness. Warm aromas of ripe peach and vanilla baking spice greet you on the nose followed by quince, honeydew melon, wet stone and a dollop of orange marmalade. The palate is fulsome and concentrated with honey-drizzled golden fruit basking in late-August sun.

A pure Chardonnay, partially aged in oak barrels, the 2023 Limoux Domaine De L’Aigle Chardonnay displays woody, brioche, and toasted notes, along with herbal tea, genmaicha green tea, and roasted peach, but with a salty dimension that skillfully complements the other flavors. Full-bodied, rich, delicately spiced, and still young, it has retained its freshness and has a good length on the finish. This white wine will continue to evolve well over the next 5 to 7 years. Drink 2025-2032.
One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
While Limoux also produces both white and red wines, it is ultimately recognized as a sparkling wine zone. Blanquette de Limoux is the region’s original sparkler, which is based on Mauzac with small amounts of Chardonnay and/or Chenin Blanc. The more rustic and traditional version, Blanquette Méthode Ancestrale, is an often cloudy and sweeter sparkling wine made exclusively from Mauzac.
In the 1990s, the region created the more modern, Crémant de Limoux, for international markets.
