Winemaker Notes

Aromas of pink grapefruit, pear, nectarine and wild flowers meld with subtle and complexing flinty undertones, with hints of cashew nut. There are lots of different elements, but all beautifully integrated. A very complex and harmonious bouquet. Citrus (pink grapefruit and lime), peach and pear flavors finish with persistent mineral acidity. The flavors start delicately in the mouth and build through to the finish. The palate is medium bodied and textural with restraint and finesse, but no shortage of flavor. The wine is powerful, yet controlled, with great focus and harmony…and beautifully seamless. A slightly more restrained version of the Devil's Lair Chardonnay. The cooler year has lent beautiful focus to the wine, with a tantalising mineral acid finish. There is every bit of interest and complexity you would expect from Devil's Lair Chardonnay.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
