Showcasing the Cape’s ability to turn out great Left Bank-style blends is this Cabernet Sauvignon-dominant wine from Stellenbosch’s De Toren Private Cellar. Fusion V, the boutique winery’s flagship label, takes its name for its selection of the best of Bordeaux’s ‘noble 5’ grape varieties that comprise the blend; 52% Cabernet Sauvignon, 16% Malbec, 14% Cabernet Franc, 11% Merlot, 7% Petit Verdot. A rich and concentrated wine filled with mixed red and black berries, hints of dark chocolate and an oak-spiciness around the edges. It has a lovely smooth texture and is extremely drinkable. A great recommendation from one of the sommeliers at The Butcher Shop restaurant and deli in Cape Town, where it's also available to purchase. Drinking Window 2019 - 2029

The palate is smooth and velvety in feel, with moderate tannins that frame the plush fruit flavors and offer lingering grip and structure through the close. A blend of 52% Cabernet Sauvignon, 16% Malbec, 14% Cabernet Franc, 11% Merlot and 7% Petit Verdot, the 2016 Fusion V checks all the boxes currently and will be a sleeper of a wine. Sandwiched between two excellent vintages for Stellenbosch, the wine offers dark berry essence, classic oak expressions and hints of cassis, dark plum and cherry in the glass. Full-bodied, the wine offers a seamless and balanced structure in the mouth with lifting tannins and energetic acidity framing the ripe fruit expression. The wine concludes with a long finish, and it drinks well now but will undoubtedly reward those who practice patience and maintain a cellar. It’s wonderful now, but I see it getting better at 15 years of age. Rating: 90+

One of the world’s most classic and popular styles of red wine, Bordeaux-inspired blends have spread from their homeland in France to nearly every corner of the New World. Typically based on either Cabernet Sauvignon or Merlot and supported by Cabernet Franc, Malbec and Petit Verdot, the best of these are densely hued, fragrant, full of fruit and boast a structure that begs for cellar time. Somm Secret—Blends from Bordeaux are generally earthier compared to those from the New World, which tend to be fruit-dominant.
South Africa’s most famous wine-producing district, Stellenbosch, surrounds the historic town with the same name; fine winemaking here dates back to the late 1600s. Its valleys of granite, sandstone and alluvial loam soils between the towering blue-grey mountains of Stellenbosch, Simonsberg and Helderberg have the capacity to produce beautiful wines from many varieties. The climate is warm Mediterranean, tempered by the cool Atlantic air of nearby False Bay.
Perhaps most well-known for its Pinotage and Bordeaux blends, Stellenbosch also produces noteworthy wines from Syrah, Chenin blanc, Chardonnay and Sauvignon blanc. The district’s wards—Banghoek, Bottelary, Devon Valley, Jonkershoek Valley, Papegaaiberg, Polkadraai Hills and Simonsberg-Stellenbosch—all produce distinctive wines from vines with relatively low yields.
