Winemaker Notes

A dense nose of cassis and mulberries with coffee and dark chocolate weaving through a backdrop of fine oak. More elegant than previous vintages, the palate offers freshness while still delivering concentration and complexity. Youthful flavors of cassis and red currant dance alongside violets, dried herbs and earth, with fine minerally tannins fanning out on the finish.

The saturated purple 2006 The Coppermine Road Cabernet Sauvignon exhibits aromas of pain grille, pencil lead, vanilla, cinnamon, black cherry, and black currant. Impressively structured and well-balanced, this dense Cabernet demands 6-8 years of cellaring after which it will drink beautifully from 2016 to 2036.

Very true to the variety, with ample servings of cedar, tobacco and cassis, plenty of weight and a firm structure that bodes well for aging. Best from 2010-2020.

Sweet boysenberry and currant flavors contrast the earthy tannins of this cabernet, leaving a bright impression. A fresh, floral note develops out of the dense fruit, leaving any oak influence in the background. Decant this five or six years from the vintage with roast lamb.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
