Enjoy this versatile wine on its own or with a wide range of simple salads, fish, or shellfish (especially sushi, freshly-shucked oysters, sole, or grilled calamari).

Made from 47% Rolle (Vermentino), 40% Sauvignon Blanc, and the balance Ugni Blanc, the 2017 Coteaux d'Aix en Provence Blanc is just a fun, delicoius, irresistable white. White peach, citrus, lemon, and floral notes all give way to a ripe, rounded, seamless white that has a beautiful salinity that makes your mouth water. It's about a delicous and fun to drink as it gets.
With hundreds of white grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended white wines. In many European regions, strict laws are in place determining the set of varieties that may be used in white wine blends, but in the New World, experimentation is permitted and encouraged. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a variety that creates a soft and full-bodied white wine blend, like Chardonnay, would do well combined with one that is more fragrant and naturally high in acidity. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
A fantastic source of dry rosés from the usual red Rhône varieties, Coteaux d'Aix-en-Provence is a coastal, hilly region whose variations in elevations and microclimates make it ideal for viticulture. Red and a small amount of white wines, also made from Rhône grape varieties, are found here as well.
