Clarendon Hills Hickinbotham Cabernet Sauvignon 2008 Front Label

Winemaker Notes

Clarendon Hills Hickinbotham Cabernet Sauvignon has a lifted spiral of tightly wound, but polished graphite, crushed rock, rose petal, roast meat, espresso and salty black licorice. Brooding undertones such as smoky black cardamom and bitumen emerge and contrast the perfume making a posh expression. Firm in structure, this Cabernet has a tight and assertive.

The 2008 Hickinbotham Vineyard Cabernet Sauvignon has a very deep garnet-purple color and intense notes of black currant juice, Provence herbs, kirsch, chocolate, espresso, pencil shavings and iron ore. Full-bodied, very crisp and rich with a high level of fine tannins, it has a long coffee laced finish.
  • 91
Focused, vibrant and complex, offering tobacco and savory spice overtones to the dark berry flavors, persisting expressively on the finish. The tannins need time to soften. Best from 2015 through 2020.

In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
