Winemaker Notes

One of the three monopole bottlings of Chateau Fuisse, the vineyard of Les Combettes covers just 4.4 acres within the village of Fuissé. Vines are densely planted in a well drained soil made up primarily of limestone, pebbles and small amounts of clay.

A firm, closed wine at this young stage, it has weight and a sense of rich fruit flavors. Coming from a limestone vineyard, it wears its minerality on its sleeve, a steely, structured wine, aged in wood, that needs several years to show its best. Give it five years or more.

The 2011 Chateau-Fuisse Les Combettes has a tightly coiled, slightly earthier bouquet compared to the other cuvees. Eschewing new oak, the fruit is allowed to blossom with subtle honeysuckle notes emerging with time. The palate is very well-balanced with hints of quince and dried apricot. This is very elegant and poised with an approachable, generous finish that is as fresh as a daisy.

A 15th Century tower flanks Chateau Fuisse, a family home whose history is evidenced by a number of 300 year old artifacts and adornment. The estate of Chateau Fuisse includes vines exceeding 60 years of age that are vinified and bottled separately as Vieilles Vignes -a remarkably powerful, intense Chardonnay with aging capability of up to 15 years or more in bottle. The "normal" Chateau Fuisse is also a selection from older vines at least 25 years of age, and as a rule is focused and concentrated, rich yet very firmly held together. From the estate, three further bottlings come from individual plots or climates: Le Clos, a profound, powerful Chardonnay from the dense clay enclosure behind the chateau; Les Combettes, a superbly aromatic wine of great finesse from a very stony calcareous clay slope; and Les Brules, a south facing slope "burnt" by the sun. All the wines bearing the chateau label are barrel fermented in various oaks. The current owner and winemaker is Jean-Jacques Vincent, great-grandson of the founder, now assisted by his daughter Benedicte. A professor of enology, Jean-Jacques is as alert to modern innovations as he is loyal to proven traditional methods.

The source of some of the richest and most sought-after Chardonnays of the Mâconnais, Pouilly-Fuissé represents a land of opportunity both for local growers and producers farther north in the Côte d’Or. Its soils are quite the same as its northern nieghbor (limestone) but its weather is a bit warmer and land prices lower.

The appellation is restricted to the Chardonnay grape and includes the communes of Fuissé, Solutré (which includes Pouilly), Vergisson and Chaintré. The richest Chardonnay comes from Fuissé and Solutré-Pouilly, whereas the Chardonnay at higher elevation from Vergisson expresses more minerality and finesse.

Tradition has the wines age one year in barrel before release and while maybe not offering the elegance of Beaune Chardonnay as a whole, they still age well and are considered some of the very best values for white Burgundy. Pairing Pouilly-Fuissé with lobster or King Crab will bring great joy not only to your palate—but also your pocketbook!

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it’s grown and how it’s made. In Burgundy, Chardonnay produces some of the finest white wines in the world, typically tending towards minimal intervention in the winery and at its best resulting in remarkable longevity. This grape is popular throughout the world, but perhaps its second most important home is in California, where both oaky, buttery styles and leaner, European-inspired wines enjoy great popularity. Oregon, Australia, South America, South Africa, and New Zealand are also significant producers of Chardonnay.

In the Glass

When planted on cool sites, Chardonnay’s flavors tend towards grapefruit, green apple, minerals, and white stone fruit, while warmer locations coax out richer, more tropical flavors of fig, melon, and pineapple. Oak can add notes of vanilla, coconut, and spice (as well as texture), while malolactic fermentation can impart soft, buttery acidity.

Perfect Pairings

Chardonnay is as versatile at the table as it is in the vineyard. The crisp, clean, Chablis-like styles go well with simple seafood, light chicken dishes, and salads. Richer Chardonnays marry well with cream or oil-based sauces.

Sommelier Secret

Since the 1990s, big, oaky, buttery Chardonnays from California have enjoyed explosive popularity. More recently, the pendulum has begun to swing in the opposite direction, towards a clean, crisp style that rarely utilizes new oak. These Old-World style wines have been dubbed the “New California Chardonnays,” and anyone who claims they do not like Chardonnay should give them a try.
