    Haydn Mouat, went on a mission to craft premium wines that supported his interest in healthier living and an active lifestyle. This quest took over two years of research in new winemaking innovation followed by extensive tasting evaluation. The results are original wines that deliver on delicious flavor and reduced calories. Haydn became involved in wine by working a harvest making Pinot Noir, Chardonnay, and Riesling at Gibbston Valley Winery in Queenstown, New Zealand and loved it. After working harvest, he earned his undergraduate degree (BS) in enology and viticulture at Lincoln University. He continued his winery career in Okanagan B.C. at Hawthorne Mountain Winery, then he moved to California where he became a cellar master in 2002, and was quickly promoted to associate winemaker. He joined the Waterbrook Winery team in 2011, then in 2014 left to work at Gallo before returning to Cense Cellars in 2017. In his free time he is also an avid skier who enjoys Walla Walla's close proximity to the Blue Mountains. Cense is a premium low calorie wine which is crafted for taste. It was created in partnership with WW (formerly known as Weight Watchers). Our wines are only 85 calories per 5oz. serving and around 9% alcohol. The first Cense Wine launched in 2017 was a Sauvignon Blanc, the second, a California Rosé. The quality of this wine is something we are really proud of. It’s a great wine, it’s a serious wine, and we really excited about the relationship we have with WW. In 2015, Cense Cellars and WW (formerly known as Weight Watchers) set out to create a flavorful SmartPoints®-friendly wine. The result, a co-created line of Cense Wines! We went back and forth, tasting, testing, and tweaking, prior to perfecting it! Today Cense Wine is available in two flavor varietals - a crisp Sauvignon Blanc and a pale California Rosé. Both wines are only 3 SmartPoints value per 5 fl. oz serving. Cense is the only WW endorsed wine which is low in calories and alcohol but big on flavor

    An icon and leading region of New Zealand's distinctive style of Sauvignon blanc, Marlborough has a unique terroir, making it ideal for high quality grape production (of many varieties). Despite some common generalizations, which could be fairly justified given that Marlborough is responsible for 90% of New Zealand's Sauvignon blanc production, the wines from this region are actually anything but homogenous. At the northern tip of New Zealand’s South Island, the vineyards of Marlborough benefit from well-draining, stony soils, a dry, sunny climate and wide temperature fluctuations between day and night, a phenomenon that supports a perfect balance between berry ripeness and acidity.

    The region’s king variety, Sauvignon blanc, is beloved for its pungent, aromatic character with notes of exotic tropical fruit, freshly cut grass and green bell pepper along with a refreshing streak of stony minerality. These wines are made in a wide range of styles, and winemakers take advantage of various clones, vineyard sites, fermentation styles, lees-stirring and aging regimens to differentiate their bottlings, one from one another.

    Also produced successfully here are fruit-forward Pinot noirs (especially where soils are clay-rich), elegant Riesling, Pinot gris and Gewürztraminer.

    Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
