Winemaker Notes

A stubborn, and tenacious vine, Cabernet Sauvignon is able to transform itself during fermentation, into a sensual and elegant product perfectly balanced with its important tannins.

Black-peppered plum ignites on first sip, followed by spiced cedar and a twist of espresso that run deep. Dramatic acidity lengthens the finish of tart currant.

  • 89

The 2019 Cabernet Sauvignon Il Buon Bastardo opens with black currants, cloves and balsamic spice. This is racy and sleek on the palate. Vibrant acidity enlivens its red and blueberry fruits. A staining of minerality mingles with subtly grippy tannins as the 2019 finishes a bit tart yet fresh.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Known as the ancient homeland of the Latins, today there is a vigorus wine industry beyond the city limits of modern, bustling Rome. The Cesanese grape, full of red berry, spice and rose, is responsible for Lazio’s only true local reds. Lazio’s most famous white wine, called Frascati, is based on the local Malvasia del Lazio and Trebbiano Toscana. A sweet version, called Cannellino di Frascati, is also made.
