Winemaker Notes

With over a century of experience in the wine and spirits business, William Grant and Sons has been dedicated to hand selecting an excellent portfolio of wines from around the world. We are proud to bring that same expertise to the Napa Valley to create Bennett Family Cabernet Sauvignon. Working with some of the best talent in the region, we?ve made this wine using hand selected grapes from the finest vineyards. The result is a wine of uncompromised quality, a wine worthy of our family?s heritage. Following a 7 day fermentation, the wine was left on the skins for a period of extended maceration; in addition to softening the tannins, this process helps extract maximum color and flavor.? Once the wine was gently pressed, it was racked to French oak barrels, 60% of which were new.? The wine underwent the malolactic fermentation in barrels to "tame" the new barrel tannins and was then aged for 18 months before bottling. Varietal Composition: 100% Cabernet Sauvignon Appellation: Napa Valley Age of Vines: 10 Years Cases Produced: 1,800 Alcohol Content: 14.5% alc./vol. Total Acidity: 0.59 g/l pH: 3.68 Tasting Notes: Aromas of black fruit dominate: cherries, plums, and a briar patch on a warm day come to mind. The aromas carry over to the palate in a mouth-filling, full-bodied package with well rounded tannins that hint at years of drinking pleasure to come. A long, seamless finish invites another taste.

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
