Winemaker Notes

Channeling all the energy of Sauvignon Blanc into an expression of beauty has required their farming and winemaking to be in complete harmony with the terroir. Currently the formula includes lots of direct sun on the fruit, two yeast in the primary fermentations, a stylistic interpretation that is like Top Cream; barrel and malolactic fermentations and bottling without filtration so as to capture all the nuances. Finally, after all these years, everything is simpatico, and the beast has not only been tamed, but mastered.

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.

A superior source of California Chardonnay and Pinot Noir, Sta. Rita Hills is the coolest, westernmost sub-region of the larger Santa Ynez Valley appellation within Santa Barbara County. This relatively new AVA is unquestionably one to keep an eye on.

The climate of Sta. Rita Hills is a natural match for Chardonnay and Pinot noir, thanks to the crisp ocean breezes and well-drained, limestone-rich calcareous soil. Here, grapes ripen just enough, while retaining brisk acidity and harmonious balance.
