Winemaker Notes

Deep ruby in color, the 2015 Austin Hope Cabernet Sauvignon expresses aromas of freshly picked black currants, ripe black cherries, and blackberries, with subtle notes of violets, mocha, and dried spices. On the palate, it’s a big, powerful, modern-styled wine layered with heaps of juicy blackberry and cherry fruit, while nuances of cedar, clove, nutmeg and vanilla bean round out the long smooth finish. It’s full-bodied and rich, balanced by fresh acidity and firm, polished tannins.

Wine Enthusiast
Vintner Austin Hope, whose family is intertwined in the rise of Paso Robles, spent years working to release a wine of this caliber. Dark and thick in the glass, aromas of black currant and blueberry meet with roasted coffee, chocolate syrup and baked plum on the wondrous nose. The palate is soft and extremely expressive, with blueberry, black pepper, firm midpalate tannins and a finish that’s redolent of cappuccino candies.

How do I feel about Paso Robles Cabernet Sauvignon? Over the decades of tasting, I have gone from not a big fan to really liking them. Today, I am mixed in my feelings because the range of wines are often variable. This 2015 Austin Hope stands out and could become the vanguard of where this region is going with their Cabs. At first sniff I found a lot of black fruit and tar, with a hint of a savory mint. This was good, but I was sure how I felt. As I gave the wine additional time in the glass and it paid off. In spite of its high extraction and elevated alcohol (15%), this wine is quite fine. Enjoy its bold black fruit, aromatic coffee grinds, and tar-like notes with a healthy serving of barbecue pork ribs with the sauce on the side. Hey Paso Robles, I am with you! Austin Hope, California
Austin Hope The Winery in Paso Robles Winery Image

Austin Hope grew up working alongside his father, inheriting his love and respect for the region. He led the family’s move into winemaking in 1995, and further exploration of Paso began. In 2000, Austin created the Austin Hope label, making very small productions of Rhône varietals. These wines are produced from vines grown at the family’s estate property, where soils and climate have similarities with Rhône Valley vineyards. They remain small yet extraordinary productions. Each bottling holds onto a unique intensity and softness, expressing a special side of Paso.

Today, Austin is showcasing an even greater sweep of the Paso region and expressing a similar richness with a recently released Cabernet Sauvignon. The source of the wine is far-reaching within the appellation - a most discerning group of vineyards located on gently sloping hillsides and hidden pockets across the domain, providing dimension to the Cabernet varietal. The wine has a bold structure of lush, velvety tannins and an unmistakable elegance. It is dark, ripe and eminently enjoyable.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
