Winemaker Notes

The aromas of this wine exhibit profound notes of fresh loam, dusty cocoa powder and crushed rock. In the mouth, spicyblack licorice, dried laurel and delicate violet nuances balance the ripe, juicy, briary black fruit components. On the palate, itis seamless, complete from start to finish, showing the luxurious velvety tannins that are the signature of Eisele Vineyard andending with a long graphite note. Notes winemaker Matt Taylor: This wine is expressive of earth, chocolate, mineral and darkfruit notes, yet the superb silky tannins that persist through the extended finish, and the acidity that preserves freshness, combineto create a balanced, youthful and rich wine with years of ageing potential.

Blend: 91% Cabernet Sauvignon, 5% Merlot, 4% Petit Verdot.

    This is a little riper on the nose than the 2006, with a light raspberry and blackberry jam character combined with a vanilla latte. Full bodied and juicy, with broader shoulders and round tannins. This is powerful and rich, with loads of ripe tannins and fruit. This is all about layers. Don't touch this until 2015.

    Since last year’s report I have had the 2007 Cabernet Sauvignon Eisele Vineyard on three separate occasions, including recently at the winery. It has definitely improved over last year’s report, but it has not lived up to my barrel tasting reviews. There is no explanation for this other than that the Araujos told me that the wine was bottled three months later than normal, which seems like a negligible reason to explain the differences. A beautiful wine by any standards, it is just not one of the great Eiseles. Its deep plum/ruby/purple hue is accompanied by notes of cassis, blueberries and acacia flowers. This medium-bodied effort seems surprisingly reserved and restrained, but it has put on a little weight, revealing sweet tannin as well as a velvety texture. This offering should drink nicely for 12-15 years.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

One of Napa Valley’s oldest wine growing subregions but last to gain appellation status, Calistoga occupies the northernmost section of the valley. Beginning at the foot of Mount St. Helena, its vineyards stretch over steep canyons and roll out onto the valley floor. The soils in Calistoga are volcanic, which means they are heavy in minerals, low in organic matter and allow good drainage for vine roots, creating less green growth and more concentration of flavor within the grape berries.

Summer days are very hot but most nights cool down with moist ocean breezes sneaking in over the Mayacamas Mountains or from Knights Valley to its northwest.

Cabernet Sauvignon is the area’s star variety with Zinfandel coming in a strong second, though the latter commands far less price per tonnage so continues to be outshined by Cabernet in vineyard acreage, save for some important exceptions.
