Winemaker Notes

Vines planted in 1971 in Alkoomi’s gravelly loam soils. The vineyard was planted out block-by-block over some 40 years on north, south and east-west facing slopes. At least eight separate blocks comprising this wine, resulting in great complexity and depth. Grapes are harvested and crushed into fermenters via a chiller for a pre-fermentation cold soak of three or four days. Eighteen months aging in French oak hogsheads (Francois Freres, Demptos and St. Martin), about one-fifth of which are new. No fining, minimal filtration and sulfur addition.Bright and fresh blackberry flavors continue on the medium-bodied palate with savor dark chocolate mingling with the fine-grained dusty tannin structure.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
