Winemaker Notes

The Bavarian Lion Vineyard always showcases vibrant blue/black fruits with a tannin profile that is silky and smooth, yet firm in its youth. Knowing this about the vineyard it is important to showcase the fruit with tannins in proportion to the other flavor components.

The 2014 Bavarian Lion Cabernet Sauvignon has a richness and depth that was crafted by the choices from vineyard to bottle. Precision picking timing, exacting extraction, and careful aging for 30 months in 90% new French oak all contribute to this wine’s power and grace. Extra time in barrel helps mold nuanced tannins, aroma development, and greater expression of the wine’s personality.

    Deep garnet-purple colored, the 2014 Cabernet Sauvignon Bavarian Lion Vineyard is scented of black and red currants, crushed blackberries and bay leaves with touches of pencil shavings and cloves. Full-bodied, rich and concentrated in the mouth, the palate is loaded with black berry and spice box flavors, supported by firm chewy tannins and a lively backbone, finishing long with the oak poking through.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
