Winemaker Notes

The Dijon Clones (40% of the blend) add a floral spiciness to the Chardonnay, melding beautifully with the figs and apples we get from the 108. The wine is round, yet elegant, balanced, with a lovely, clean finish. Classic matches for this wine include smoked foods of all kinds. Drier versions of Thai peanut sauces also produce a desired combination.
