    Winemaker Notes

    Resembling apples, honeysuckle, roasted nuts and pineapple individually, and full of luscious perfumed aromatics, the wine exudes richness and viscosity tempered with refreshing and energetic length. The finished wine evokes the redolence of springtime flowers, honeydew melon and crème caramel contrasted with finishing flavors of lemon meringue and baked pineapple. At its best now through 2019.

    Pair with spicy Vietnamese lemongrass tofu, sautéed Thai chicken thighs with ginger-soy, and seared duck foie gras with green grape sauce.

    Adelaida Cellars’ family owned vineyards include seven distinct properties totaling 168 acres in the craggy mountainous terrain of Paso Robles' Adelaida District. Only 14 miles from the Pacific Ocean, these are steep and elevated sites (1400-2000 feet), characterized by chalk rock limestone soils, afternoon blasts of cool coastal air, and a daily microclimate that swings 40-50 degrees. With an emphasis in Rhônes, old vine pinot noir, dry farmed zinfandel, and mountain style cabernet sauvignon the stressed vines produce low yields of precise flavor.

    Although Adelaida’s vineyards were certified as sustainable in the past, now both the vineyards and winery have been certified. In order to achieve certification, Adelaida has met all of the program’s 82 prerequisites (50 Vineyard Best Practice criteria and 32 Winery Best Practice criteria). These prerequisites include various factors from crush operations at the winery to soil nutrient monitoring in the vineyard. In addition, Adelaida has demonstrated a commitment to sustainability when it comes to both winegrowing and winemaking. This is evident in our approach to water conservation, clean energy, habitat preservation, and sustainable farming. By accomplishing these goals and creating a plan of action to continue improving, Adelaida Cellars has earned the distinction of being a Certified California Sustainable Winegrowing Winery & Vineyard.

    Covering the Santa Lucia Range in the northwestern portion of the greater Paso Robles appellation, the Adelaida District AVA reaches from 900 feet to over 2,000 feet in elevation. The appellation does well with Rhone and Bordeaux varieties as well as Zinfandel.

    Rhône White Blends

    Full-bodied and flavorful, white Rhône blends originate from France’s Rhône Valley. Today these blends are also becoming popular in other regions, proving most successful in Spain, Australia and California. Typically some combination of Grenache blanc, Marsanne, Roussanne and Viognier form the basis of a white Rhône blend with varyiong degrees of flexibility depending on the exact appellation.

    In the Glass

    Each variety contibutes something unique and different. Round, textural Grenache blanc gives green apple and white stone fruit flavors; weighty Marsanne adds structure and honeysuckle aromas; russet-colored Roussanne lends intriguing herbal, tea-like notes while Viognier provides a creamy texture and elegant aromatics. The flavor of the final wine will depend on the chosen components of the blend and their respective proportions.

    Perfect Pairings

    White Rhône blends are quite versatile food pairing wines and can work with light to medium rich meals that might often be matched to red wines. Heavier fish dishes with bold seasoning like grilled swordfish with caper butter or baked, herb-crusted mahi mahi are natural allies for these flavorful wines. Other ideal dishes include roast pork in mustard sauce, poached lobster with beurre blanc, or a rich and savory vegetable quiche. `

    Sommelier Secret

    In the Northern Rhône, blends of Marsanne and Roussanne are common in the appellations of St.-Joseph, Crozes-Hermitage, Hermitage and St-Péray. Condrieu and Château-Grillet can produce single-varietal Viognier only. The Southern Rhône, on the other hand, has much more variety, with many more permitted grapes including the ones named above as well as Bourboulenc, Clairette, Picpoul and Ugni Blanc.
