    Winemaker Notes

    Wine Spots Monterey Chardonnay has crisp acidity and intense tropical fruit, hallmarks of Monterey. Clean toasty notes of sweet oak and vanilla lead to a lively finish. Barrel-fermented in small, French oak barrels and aged sur lie for 12 months.

    Monterey, located along the central coast of California, benefits from the Pacific Ocean's morning fog and cool winds. The cool-climate marine influence creates one of the world's longest growing seasons, ideal for producing Chardonnay wines full of character and balanced acidity.

    Food Pairings: Enjoy with chicken, pasta dishes with a cream sauce, salmon, seafood and mild cheeses.

    Wine Spots Wines was inspired by Daniel LeFrancois’s travels throughout the world. While backpacking through France, Daniel was enjoying a glass of wine at a café near Montmartre in Paris, contemplating his next adventure, when he spilled a drop of wine onto his map, landing next to Saint-Émilion. This inspired him to continue his journey to Bordeaux and ignited his love of wine. That "spot" on the map became a treasured souvenir, one that would remind him of all the great moments he experienced on that trip. As Daniel became more involved in the world of wine, he reflected upon his years of traveling and found himself remembering the wines he enjoyed on his adventures. When his dream of crafting his own wines became a reality, Daniel knew that he wanted his wines to combine his passion for wine and travel.

    Thus was born Wine Spots, a collection of wines that explores the finest wine regions around the world. Daniel works with some of the best vineyards and top winemakers to produce wines that capture the distinctive qualities and terroir that define these regions.     A large and diverse appellation within California’s North Coast AVA, Mendocino is home to several smaller sub-regions—most notably the Anderson Valley. This scenic region covered in redwood forests is one of the world’s top producers of certified organically-grown grapes. Due to wide geographical and climatic variation, a vast array of wine styles can be found here.

    Cabernet Sauvignon

    A noble variety bestowed with both power and concentration, Cabernet Sauvignon is sometimes referred to as the “king” of red grapes. It can be somewhat unapproachable early in its youth but has the potential to age beautifully, with the ability to last fifty years or more at its best. Small berries and tough skins provide its trademark firm tannic grip, while high acidity helps to keep the wine fresh for decades. Cabernet Sauvignon flourishes in temperate climates like Bordeaux's Medoc region (and in St-Emillion and Pomerol, where it plays a supporting role to Merlot). The top Médoc producers use Cabernet Sauvignon for their wine’s backbone, blending it with Merlot and smaller amounts of Cabernet Franc, Malbec, and/or Petit Verdot. On its own, Cabernet Sauvignon has enjoyed great success throughout the world, particularly in the Napa Valley, and is responsible for some of the world’s most prestigious and sought-after “cult” wines.

    High in color, tannin, and extract, Cabernet Sauvignon expresses notes of blackberry, cassis, plum, currant, spice, and tobacco. In Bordeaux and elsewhere in the Old World you'll find the more earthy, tannic side of Cabernet, where it's typically blended to soften tannins and add complexity. In warmer regions like California and Australia, you can typically expect more ripe fruit flavors upfront.

    Perfect Pairings

    Cabernet Sauvignon is right at home with rich, intense meat dishes—beef, lamb, and venison, in particular—where its opulent fruit and decisive tannins make an equal match to the dense protein of the meat. With a mature Cabernet, opt for tender, slow-cooked meat dishes.

    Sommelier Secrets

    Despite the modern importance and ubiquity of Cabernet Sauvignon, it is actually a relatively young variety. In 1997, DNA revealed the grape to be a spontaneous crossing of Cabernet Franc and Sauvignon Blanc which took place in 17th century southwestern France.
