Winemaker Notes

William Hill Napa Valley Cabernet Sauvignon is a structured and polished expression of the variety through the lens of the William Hill estate vineyard. Offering layers of complexity, this wine opens with enticing aromas of blackberry and black cherry while notes of black olive, ripe plum and licorice are revealed on the palate. Perfectly balanced, this full-bodied wine showcases graceful acidity, fine-grain tannins and a long structured finish making it a wine to enjoy now, after an hour of decanting, or tuck away in the cellar, as it will age wonderfully for 8 -10 years.

Inky dark in color, and supersaturated in flavor, this welcoming, generous wine bursts with blackberries, blueberries, mint and cinnamon notes that feel lush and rich on the palate. It is fun to sip, yet should age well for a few years.

Restrained aromas of oak spices, tobacco leaf, toasty oak and blackberries. Lush palate, with soft and generous tannins.

Friendly, with a gush of plum sauce, boysenberry pate de fruit, bramble and anise notes pumping through, flanked by roasted apple wood and violet. Shows more guts than finesse stylistically, but with good energy and focus. Best from 2024 through 2034. Tasted twice, with consistent notes. 1,246 cases made.

The estate-grown 2020 Cabernet Sauvignon Napa Valley is 96% Cabernet Sauvignon, with pinches of Malbec, Merlot and Petit Verdot. Aged 20 months in 55% new French oak, there's a hint of dark chocolate accenting ripe cherries and cassis on the nose, while the medium to full-bodied palate is silky and fine, finishing long and softly dusty.

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
