Winemaker Notes

Protegido originates in Quinta de Maipo, the place where first and most valued vines are grown. The Maipo River's influence ensures poor soils and excellent drainage which combine with cool winds to achieve the best possible expression of this Cabernet Sauvignon. It has an intense ruby color and attractive red fruit and cassis aromas with delicate vanilla and sweet spice notes. The palate captivates with its tannins' perfectly balanced power and elegance, and together with an pleasing acidity delivers a persistent finish.

    Wow. This is a rich red with licorice and currant character plus hints of blackberries. Full body, polished and refined tannins and a flavorful finish. Better in 2015 but delicious already. Reminds me of a serious Napa cab like one of Bond's.

    Cassis, cherry and coconut aromas are toasty and offer a minerally note. Lively and juicy across the palate, this Maipo Cabernet brings a typical Chilean mix of plum, currant, herb, spice and chocolate flavors. A dry, peppery finish shows some unresolved oak, meaning this has more time to mature.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

The Maipo Valley is Chile’s most famous wine region. Set in the country’s Central Valley, it is warm and quite dry, often necessitating the use of irrigation. Alluvial soils predominate but are supplemented with loam and clay.

The climate in Maipo is best-suited for ripe, full-bodied reds like Cabernet Sauvignon (the region’s most widely planted grape), Merlot, Syrah and Carmenère, a Bordeaux variety that has found a successful home in Chile.

White wines are also produced with great prosperity, especially near the cooler coast, include Chardonnay and Sauvignon Blanc.
