Winemaker Notes

Dark maroon and black cherry. Intense blackcurrant and black cherry fruit, with complimentary coffee and chocolate aromas. These above earthy hints of sage, bay leaf, mushroom, truffle, and venison. Juicy and fine up front with dark cherry succulence and a savoury dark chocolate sensation, akin to black forest cake. Vibrant fruit is carried with the bright acidity and attractive tannins building to the dry finish with lingering perfume remaining.

Deep garnet-purple colored, the 2014 Filius Cabernet Sauvignon is scented of crushed blackberries and black currants with a bay leaf, dried thyme and pencil shavings background plus a hint of cloves. Medium to full-bodied, it packs a lot of fruit into the palate, well supported by grainy tannins and just enough acid, finishing with good length.

An excellent example of cool weather Cabernet Sauvignon, the 2014 Vasse Felix from the Margaret River shows red currants and dried herbs in its aromas and flavors. The wine's medium bodied style pairs it well with grilled pork chops. (Tasted: July 11, 2017, San Francisco, CA)

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
