Winemaker Notes
Aromatics of the 2022 Sentium are evocative of the Northern California coastline - fresh salt spray, flint,and the delicate morning essence of citrus and spring rose. The wine is nimble and vibrant, expressingfresh lychee, white stone fruit and wet river rock. On the palate, fresh cut thyme, chamomile, savorylemon curd and white tea accentuate the finish. A seductive and lithe wine with impressive gravity at itscore and an extended mouthwatering minerality that harmonizes with its delicate, silken texture.

Aromas and flavors of sliced apples, green pineapple and hints of flint. Medium-bodied with a lovely depth and brightness. Acid driven with just a touch of reduction at the end. Nine months or less in concrete tanks, used large barrels and 80-gallon stainless steel drums. Made by the fourth generation of the Mondavi family, including Chiara, Brian, Carissa and Dante. This is the second production of old-vine sauvignon blanc with 7% semillion.

The 2022 Sauvignon Blanc is laced with lemon peel, crushed rocks, slate, green apple, mint and white pepper. Bright and sculpted in the glass, the 2022 is a gorgeous, super-expressive Sauvignon Blanc that leans more into the orchard fruit end of the flavor spectrum.

Elegant and aromatic, with pretty notes of lemon blossoms, white pepper and litsea oil. The core of pear, apple, pomelo and ruby grapefruit is fresh and crisp, with a long, lingering finish and touches of white tea and tarragon that linger.

A blend of 93% Sauvignon Blanc and 7% Sémillon, Sentium's 2022 Sauvignon Blanc was fermented and matured in a variety of small vessels, roughly one-third each stainless steel, concrete and oak (puncheons), spending 10 months on the lees prior to racking and bottling. It comes across as slightly restrained aromatically, with just a hint of honey to go along with bright grapefruit and lime notes. It's medium-bodied and seems less plump than the 2021, more direct and linear, with a long, tangy finish.
Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
